Crossfit Cork Wednesday 9/1/13

Cooking to build for health requires bones. One of the books that I mentioned before the holidays was Jennifer McLagan’s Cooking on the Bone. The book deals with a bit of the history of cooking and the cultural customs that have developed. Bones are organs, people tend to forget that part and are living tissue, the marrow being the most nutritious part. But we are also interested in the connective tissue around joints, both parts contain key nutrients (most abundant protein in the body collagen and wrapped around that triple helix are the glycosaminoglycans :chondroitin, hyaluronic acid and glucosamine to name a few)  These are responsible for holding things together strongly, keeping it all supple and well lubricated. Get a good recipe for an Irish stew and make a very big pot -Get that connective tissue strong!!
